Breakfast Burritos

When I first joined Pinterest YEARS ago, I distinctly remember stumbling on a breakfast burritos recipe that I made one or two times. It was a meal prep recipe that had you freezing them and then reheating as needed. After the initial making of them, I never looked back at the recipe, and if we wanted something similar, I’ll be honest, the Mr made them. 

Fast forward to earlier this year. Our ladies (and by ladies, I mean hens) are laying like crazy and we have more eggs than we can keep up with. We have company coming with a busy morning that required us to leave the house quickly with five kids in tow. I feel like more than one of you can relate to that scene, right? 

As such, we needed a quick meal that would be full of protein to keep the kids full. But it had to be kid friendly too. Bonus points if it’s healthy! I remembered those delicious breakfast burritos we had years ago and set out to make my own. 

We had eggs, bulk sausage, onions and peppers on hand; but no hash browns. Dang. What we did have was tater tots, so I gave them a try. I was so pleasantly surprised with the results! I can’t wait for you to give them a try too! 

In the end, all kiddos (even the pickiest of them!) asked for seconds, loving breakfast. A few weeks later, my mom pulled a sheet of paper out and said, “I need the breakfast burritos recipe from you!” “Well heck mom, I threw that together and I don’t have a recipe.”

I rattled off what I could remember and made a mental note to make breakfast burritos again, taking measurements as I went. And I’ll tell you, it is very much family approved! We also tested freezing them so if you are a meal prep kind of person, I have you set! You can make the filling, fill some fajita shells and freeze them for those busy, busy mornings! 

Let’s get cooking!

Your Ingredients 

  • ½ cup diced onions
  • ½ cup diced sweet pepper, any color 
  • 1-2 tablespoons olive oil
  • 1 pound bulk breakfast sausage 
  • 10 eggs
  • ¼ cup milk 
  • ⅛ teaspoon salt 
  • ¼ teaspoon pepper 
  • ⅛ teaspoon garlic powder
  • 8-10 ounces of hash brown patties or tater tots, thawed
  • 16 tortilla shells 
  • Shredded cheese and salsa (optional) 

Your Steps to Breakfast Burritos

In a large sauté pan, heat 1 tablespoon of olive oil. Once warm, add onions and sweet pepper. Cook for 8 minutes, stirring often. Add additional oil if needed and breakfast sausage. (I really like adding just a bit of oil to help ground protein from sticking) Break apart and cook until browned, about 8 minutes. I LOVE my meat chopper for this! Meanwhile, whisk the egg, milk, salt, pepper, and garlic powder together.

When browned, remove the onion, pepper, and sausage mixture from the pan and place in a paper towel lined bowl, but leave the drippings to cook the hash browns. Add the hash browns to the pan, breaking apart and cooking until just hot. Again, the meat chopper is great here!

Add the eggs and the sausage mixture back to the hash browns and cook until eggs are cooked through, turning from the bottom periodically. 

Serve immediately with fajita shells and other fixings like shredded cheese and salsa. Or allow it to cool, refrigerate, and reheat single burritos in the microwave in the morning for about 30 seconds (this is how we roll!).

If meal prep is your jam…

These breakfast burritos freeze great! Scoop about ⅓ of a cup of mixture onto each fajita shell. Roll them up and then wrap in a piece of wax paper. Rolled burritos can then be stored in a freezer bag and pulled out in the morning. We recommend heating them for about 1 min, 15 seconds, in 30 second intervals. 

Add cheese after they have been heated or if you’re like the Mr, you can just sprinkle it on top, heat it, and then eat them with a fork.

English Muffin Breakfast Bake

Well, I didn’t think I was a breakfast person. I have often declared that I am not a “breakfast for dinner” kind of gal because I don’t really care for breakfast food. Don’t get me wrong, I never skip breakfast. Ever. However, once I have eaten some breakfast food, I am done with it for the day. But then I made this English muffin breakfast bake and I don’t know friends, I may be convinced to create it for dinner! 

If you have experimented with breakfast bakes in the past, I am sure you have had one or two that just never seemed to finish cooking. It may be that the crescent rolls are doughy or that the eggs are runny. (These two problems inspired me to make a tortilla bake that was delish. You can check that one out here!) This one baked up nice and doesn’t have either issue and I am giving the English muffins all the credit!

What’s great about this particular recipe is that it gets fully prepped the night before and bakes up in the morning (You have to pull it out 30 minutes before you bake!) You can even do the browning of the sausage and dicing of the English muffins a few days in advance to save more time the night before. It also provides enough for a small crowd of 8-12 people, depending on the types of eaters you have. Add in some fruit, coffee, and juice and you’re set!

Your Steps ⁠To a Great English Muffin Breakfast Bake

In a medium pan, brown breakfast sausage with 1/2 cup sweet peppers and the diced onion. Cook until sausage is cooked through and peppers and onions are soft. Drain and set aside.⁠

The night before serving, grease a 9×11 baking pan. Cut the English muffins into 1 inch chunks and layer into the bottom of the pan. In a medium bowl, whisk eggs, milk, salt, pepper, and paprika. Pour over the English muffins. Sprinkle in sausage mixture. Top with cheese and additional diced pepper. Cover and allow to chill overnight. ⁠

In the morning, remove from the fridge 30 minutes prior to cooking. Bake in a 375 degree oven for 35-45 minutes, until a butter knife can be inserted and comes out clean. ⁠

Allow to cool 5 minutes prior to serving.

Baked Tortilla Egg Muffins

A few months ago, we had guests coming up for the weekend. The week prior had been hectic and crazy and meal prep was not in the cards. Because of this, I didn’t have a whole lot planned besides baking fresh cherry donuts (get the recipe by clicking the link. They are amazing and have been a request for guests around here). However, the guests also raise chickens so we were gifted a few dozen eggs. I developed these baked tortilla egg muffins with various leftovers in the fridge. 

Let me tell you, they were a huge hit. I was able to customize them for different preferences: drop the tortilla for those watching their carbs, skip the spinach for the kids, etc. I couldn’t believe how fast they came together. Beyond the speed, they were beautiful and looked like I had to have worked hard putting them together (Let them believe it, right?). Oh, and the tortilla egg muffins were no fuss with minimal mess. All the winning. 

I tweaked it a little for this recipe, using street taco sized tortillas. If you can’t find them, you can cut regular shells into thick strips and layer them (what I did the first time). I am impressed with the crisp tortilla shells and how the egg bakes up perfectly. Okay, enough talk. I hope you all enjoy baked tortilla egg muffins as much as my family did! 

Your Ingredients for Baked Tortilla Egg Muffins

  • 18 street taco size tortillas
  • 10 eggs
  • ¼ teaspoon each of salt, pepper, garlic powder, onion powder, and paprika 
  • ⅛-¼ cup milk 
  • ½ cup diced ham or browned breakfast sausage
  • ½ cup each spinach, diced peppers, tomatoes
  • Shredded cheese

Your Steps

Begin by preheating the oven to 350 degrees and preparing two muffin baking tins by spraying with non-stick cooking spray. Press tortillas into the muffin tin, folding in get them to form a cup. 

Begin by In a large liquid measuring cup (or bowl with a pour spout), whisk eggs, milk, salt, pepper, garlic powder, onion powder, and paprika until well combined. Pour into tortilla cups, filling approximately ¾ of the way full. 

Here, you can personalize each cup by dropping pieces of ham or sausage, spinach, peppers, and tomatoes. For a final touch, sprinkle them with the shredded cheese of your choice.

Finally, bake at 350 degrees for 20-25 minutes. The shells will become perfectly crispy and delicious. Serve immediately.

Note: Using fresh shells will be ideal as they are more flexible. However, if your shells aren’t fitting into the tins well, you can microwave them for a few seconds to soften them up. Just be sure to use them right away.

Quick Dish: Fried Rice

Recently, my family and I were away from home for a week. I don’t know about you, but when I get home from a week away, I need at least another day to reset. I do not want to do a thing but sit on the couch for hours, even if I was in the car for six hours leading up to getting home. And although the fridge is empty (if we did things right before we left), I certainly do not want to go grocery shopping. That, my friends, is unfortunate because I still need food for lunch the next day. However, I have discovered quick fried rice and my life has become a little easier and definitely a lot tastier.

After said trip, I looked around at what we had for food and realized we were low on proteins, at least any that were thawed. I am passionate about eating wholesome foods that are minimally processed, so this was a bit of a problem. However, I love me some brown rice with vegetables. I had some instant brown rice on hand as well as frozen Asian vegetables. Good. We also had cooked some Asian food while on vacation, so those flavors were on my mind. I opened the refrigerator to gather some liquid aminos and saw eggs. Eggs! Oh man, I can make a quick fried rice for lunch!

I felt as though I was winning at life. This meal had a starch/carb, vegetables, and a protein; a complete meal. It came together in less than 15 minutes, which is a major win in my book. Measuring is somewhat optional as you can really find flavors you love. Finally, nothing was processed and the ingredients are pantry items at our house. Let me tell you, this recipe is going into my everyday cooking brain when I need a quick, wholesome meal. I hope it does for you too!

Your Ingredients

  • 2 cups brown rice, cooked (instant or regular)
  • 8 ounces frozen mixed vegetables
  • 1-2 eggs, whisked
  • ½ tablespoon sesame oil 
  • ½ teaspoon minced garlic 

Seasonings, to taste: 

  • Ground ginger (¼-½ teaspoon) 
  • Pinch of red pepper flakes
  • Onion Powder
  • Soy sauce or liquid aminos (½ – 1 tablespoon)

Cook the vegetables according to the directions on the package. We adore these awesome steam bags that Ziploc makes for steaming frozen and raw vegetables in the microwave. (Here’s the link for them if you want to check them out: Ziploc Zip n’ Steam Bags)

Meanwhile, heat the oil in a large skillet over medium high heat. Add the garlic and cook for 30 seconds, until fragrant. Add the rice, steamed vegetables, and seasonings to taste. Allow to cook for 2-3 minutes, stirring every 30 seconds or so. 

Push rice and vegetable mixture to the side. Pour in the whisked egg(s) in the cleared spot (spraying with cooking spray prior if there is worry the egg will stick. I add a touch more sesame oil). Allow to cook 1-2 minutes, as though you are going to scramble the egg. Once the egg is starting to become solid, fully incorporate it into the rice and vegetable mixture. Saute until the egg is fully cooked. Taste and add more soy sauce, ginger, or red pepper flakes as needed. 

Quick and easy. Delish, wholesome, and a complete meal from your pantry. That’s what I call a winner in my book. Give it a try next time you’re not quite ready to make a run to the grocery store. Or maybe anytime you need a meal at your fingertip in minutes.

  • Allow to cook 1-2 minutes.
  • Once the egg is starting to become solid, fully incorporate it into the rice and vegetable mixture.
  • Sauté until the egg is fully cooked.
  • Taste and add more soy sauce, ginger, or red pepper flakes as needed.

Notes

This will always be better if you use rice you cooked a day or two before. But I get it, you may not always have thought ahead. Go ahead and use what you have.
