I didn’t grow up canning and preserving. Don’t get me wrong, I have vivid memories of helping my mom in her garden every year, although I would whine about her request of a Mother’s Day present of weeding and planting the garden (and don’t get me started on the washing and drying of spinach for salad! My sister and I HATED that job). So when I first met my husband, I would have never guessed that I would want a GIANT garden, much less enjoy spending countless hours canning and preserving. But I quickly grew to to love my in-law’s garden and small orchard and all they had to offer.

We started with one small garden. It expanded. Then we started a second and a third. Now, we have over 15 fruit trees and tons of outlying fruit bushes beyond our annual garden space. Of course, we started growing more than we could eat. The natural progression to start canning. Now, years later, it is a huge passion of mine and I can’t imagine my life without it. I started with pickles, and now I love experimenting with all sorts of canning and preserving so that we can enjoy the fruits (and veggies!) of our labor (literally!) all year ’round.
