Pressure Canned Venison Stroganoff

I’ll be honest, if you would have asked Jess if she would be canning meat 10-15 years ago, I would have laughed in your face. In fact, 15 years ago, I had never canned a thing in my life. Fast forward to now, and I am pumped to share a new way we are processing our venison: pressure canned venison stroganoff. 

A number of years ago, we grew so many green beans we couldn’t keep up. When I reached out to the facebook world for recommendations, someone told me we should pick up a pressure canner; that’s how it started. Now, we primarily pressure can venison in a variety of ways: 

However, I have taken to using my pressure canner as my waterbath canner and have dabbled with using it as a steam canner. In addition, I made a big shift in how I can by using a Cadco hot plate as my burner. I was hesitant to spend the money on a good hot plate, but wanted to protect my new glass top stove. I ADORE the set up as it gives me the stove top as a work space and I would recommend both (using only a pressure canner and the hot plate) to any canner, especially one with limited work space. 

But I digress. 

Back to the pressure canned venison stroganoff. The recipe is extremely simple: cubed raw venison, a seasoning mix of salt, pepper, garlic, and onion, raw onion and garlic, dehydrated mushroom (or freeze dried), and venison or beef stock. That’s it. 

The seasoning mixture is something we keep on hand for all canning of meat. It’s one part each of: black pepper, dried minced garlic, and dried minced onion; then two parts kosher or canning salt. Typically, I measure it with a quarter cup of the pepper, garlic, and onion with a scant half cup of salt. It’s a great base for so many things so I would mix a large batch. We season every 5 pounds of meat with anywhere from ⅛-¼ cup of seasoning, depending on how I am feeling. 

Tools of the Trade

Normally, I put this at the end of a post, but with a pressure canner, I feel as though I should put it at the beginning. I love using my weighted pressure canner. It doesn’t stress me out and I can create so many great things with it. I also think a canning funnel is a must here. Finally, I added the mushrooms I ordered. I wanted small pieces to make sure they didn’t rehydrate to giant pieces, but feel free to use whatever you’d like! 

Before you start this process, make sure you read the general directions to your own pressure canner. They may differ from what I am sharing, and you should always follow those directions first. Also, if you are a beginner canner or even advanced, it is always a great idea to check out the National Center for Home Preservation Site for more information! 

What goes in the jars? 

For each jar of pressure canned venison stroganoff, you’ll need: 

  • 1 ½ cups raw cubed venison (stew meat) 
  • ½ cup diced onions
  • ¼ cup dried mushrooms, diced small-ish (if you use the link I shared, you don’t need to dice)
  • 1 garlic clove, minced
  • Beef stock (I adore Orrington Farm’s)

For 7 quarts (the number I can fit in my pressure canner), you’ll need approximately 5 pounds of cubed venison and 16 cups of beef stock. 

Let’s Pressure Can Venison Stroganoff Base 

Begin by preparing your canner and jars. Wash and sterilize quart jars, rings, and lids. Keep warm. Check the seal and center vent of your lid of the canner. Set aside. 

Heat beef broth just to boiling, and then reduce to a simmer. You can be heating this while you fill the jars. It will be ladeled over the meat and vegetables. 

Season prepared meat with seasoning mixture mentioned above (2 tablespoons per 2 ½ pounds of meat). Using a canning funnel, stuff jars with 1 1/2 cup of raw meat each. Add ½ cup diced onion, ¼ cup dried mushrooms, and 1 minced garlic clove. 

Ladle simmering beef broth over the meat and vegetables, filling the jars just to the bottom of the rim. The meat itself will create its own broth as it cooks. I have found that if you over fill the jars with broth, siphoning occurs. Just to the bottom seems to be perfect (see the picture below).

Wipe rims with a damp cloth, center the lid on the jar and adjust the band to fingertip tight. 

Place jars on the rack of a prepared pressure canner (mine needs 3 quarts of hot water plus a splash of vinegar).

Canning Time

Place the lid on the canner and heat to high heat. Once a steady stream of steam can be seen/felt, vent for 10 minutes, adjusting the heat if needed to have a steady but not crazy stream of steam. After 10 minutes, put the weighted gauge on the vent. You will want 10 pounds if your altitude is under 1000 ft; 15 pounds if you are over 1000 ft. 

Once the weight starts to jiggle (indicating it has reached the appropriate pressure), begin timing. You will need to process pint jars for 75 minutes and quart jars for 90 minutes. Once the timer has gone off, turn off and remove the canner from heat. Allow the pressure to drop on the canner all the way (read specific canner instructions for the indicator). Remove weight and allow to cool an additional 10 minutes. Remove jars from the canner; do not retighten bands. Cool for 12 hours, then check their seals, label, and store jars. 

Let me reiterate, this is what works for my pressure canner. I HIGHLY recommend reading and then rereading your own pressure canner directions. They aren’t hard to use, but you also don’t want to dedicate this time and effort to have something not work out. 

Ready to eat that Pressure Canned Venison Stroganoff? Here’s how we prepare it! 

Your Ingredients 

  • ¼ cup butter
  • ¼ cup all purpose flour
  • ½ cup dry red cooking wine
  • 1 tablespoon Worcestershire sauce 
  • 1 teaspoon dijon mustard 
  • 3 ounces cream cheese, room temperature 
  • ⅓ cup sour cream or plain Greek yogurt
  • Red pepper flakes, to taste 
  • Cooked egg noodles

In  a large pan, melt the butter over medium high heat. Add the flour and whisk continually to create a rue, cooking for about 4 minutes. Stir in cooking wine, Worcestershire sauce, and mustard. Continue to whisk. Add cream cheese and sour cream (or Greek yogurt) as well as red pepper flakes. Once everything is well combined, open the jar of stroganoff base and slowly stir in the broth. Do this in parts, waiting for the broth to thicken before adding more. Once all the liquid has been added, gently add the meat, mushrooms, and onions. 

Cook until hot and serve ladled over the cooked egg noodles.

Pressure Canned Venison Stroganoff

With this pressure canned venison stroganoff, you can create a wonderful base for a simple yet impressive dinner.

Ingredients
  

  • 10 ½ cups cubed venison stew meat (about 5 pounds)
  • 3 ½ cups chopped onion

  • 7 cloves garlic minced
  • 16-18 cups beef stock
  • ¼ cup seasoning mix see note

Instructions
 

  • Begin by preparing your canner and jars. Wash and sterilize quart jars, rings, and lids. Keep warm. Check the seal and center vent of your lid the canner. Set aside.
  • Heat beef broth just to boiling, and then reduce to a simmer.
  • Season prepared meat with seasoning mixture. Using a canning funnel, stuff jars with 1 1/2 cup of raw meat each. Add ½ cup diced onion, ¼ cup dried mushrooms, and 1 minced garlic clove.

  • Process quart jars for 90 minutes at 10 pounds. If your altitude is greater than 1000 feet, use 15 pounds. Follow the directions of your pressure canner or see the more detailed directions in the notes.

Notes

Seasoning Mix: We keep a seasoning mix on hand at all times that is 1 part each of black pepper, dried minced garlic and dried minced onion and 2 parts kosher salt. I usually do 1/4 cup each of the pepper, garlic, and onion, and just shy of 1/2 cup kosher salt. You can use as little as a few tablespoons up to 1/4 cup for 5 pounds of meat. 
Additional Canning Directions:

Pressure Canned Carnitas Inspired Venison

Last year, we got skunked in terms of filling our freezer with venison. I am not a hunter, but my husband is an avid hunter. This year, he has provided us with three deer that we process all on our own. That means I have been able to get my pressure canning on and perhaps the best thing to come from that is this pressure canned carnitas inspired venison. 

I would be lying if I said I wasn’t a little worried about how this would turn out. Our family has a go to crockpot carnita recipe that utilizes a pork butt. When we had a kettle of cubed venison for canning, I thought, “What if we seasoned it with the carnita seasoning? Would it take it on well? How would it go on tacos or nachos?” The answer: It’s DELICIOUS and will be added to our rotation of canning every year from here on out. 

Pressure canning is my job in our home, and I wouldn’t have it any other way. I know there are horror stories of pressure canning out there and a number of people are afraid of it. And if they aren’t afraid of the act of canning the meat, they are hesitant to eat pressure canned seasoned venison. “How can meat be self stable and room temperature and still be okay to eat?” I promise, its easier than you think and the meat is great to eat. I follow all the recommendations from the National Center for Home Preservation. Let me tell you, this stuff is GOOD. 

Why should you can venison?

The meat is SO tender. It heats up in minutes, and you can have a meal on the table in under ten. The convenience is out of this world and you are still able to serve your family good for you food without being processed. We served this pressure canned carnitas inspired venison with some pico de gallo, lettuce, cilantro lime rice and cheese. It was loved all around. 

Bottom line? I am beyond excited to share how I prepare this pressure canned venison with all of you. I promise there is no reason to be afraid of a pressure canner. At the beginning, I was100% a novice who simply did some reading at the beginning. The only caution I want to give is that it does take time (primarily hands off) for it to cook. I would say make sure you have three hours to be around the house, but truly you can be doing other things while it cooks. Just be present. Ready to create some pressure canned venison stew? Let’s go! 

Your Ingredients (for 9 pints of Pressure Canned Carnitas Venison) 

14 cups raw, cubed venison 

2 ¼ cup onion (¼ cup of onion per pint jar-you’ll want a little extra so no jar goes without) 

Seasoning (see below) 

Seasoning 

Combine 5 teaspoons salt, 3 ½  teaspoons dried oregano,  3 ½  tablespoons cumin, and ⅓-½ teaspoon cayenne pepper. (you can add more if you would like but I went with the idea that I can always add more, but I can’t take it out)

Begin by preparing your canner and jars. Wash and sterilize pint jars, rings, and lids. Keep warm. Check the seal and center vent of your lid of the canner. Set aside. 

Season prepared meat with seasoning mixture. Mix well to fully coat the meat. Using a canning funnel, add ¼ cup onion in each jar. Fill the remaining space with seasoned meat, leaving 1 inch of headspace.

Wipe rims with a damp cloth, center the lid on the jar and adjust the band to fingertip tight. 

Place jars on the rack of a prepared pressure canner (mine needs 3 quarts of hot water plus a splash of vinegar). 

Place the lid on the canner and heat to high heat. Once a steady stream of steam can be seen/felt, vent for 10 minutes, adjusting the heat if needed to have a steady but not crazy stream of steam. After 10 minutes, put the weighted gauge on the vent. You will want 10 pounds if your altitude is under 1000 ft; 15 pounds if you are over 1000 ft. 

Once the weight starts to jiggle (indicating it has reached the appropriate pressure), begin timing. You will need to process pint jars for 75 minutes and quart jars for 90 minutes. Again, we served this carnitas style venison with tortillas and all the fixings: pico de gallo, lettuce, cilantro-lim lime, and cheese. Black beans would be a great addition as well!

This could be done in quart jars as well. Increase onion to 1/2 cup per jar and fill jars to the the 1 inch head space. This recipe will likely result in 3 quarts.

Stick to Your Ribs Venison and Barley Stew

Living in Wisconsin, it is chilly from mid-October through April. But don’t get me wrong, I love everything about Wisconsin, even the chilly season. I embrace and enjoy it all, from the -30 windchills to the humidity and mosquitoes. Perhaps I love the winter months because it gives me five solid months where it is 100% acceptable to eat soup every week. It’s my go to meal prep option and this venison and barley stew is a great one! Reasons why soup is the best (in no particular order):

  1. It’s comforting, they way it just warms your belly and soul.
  2. It makes fantastic left overs and reheats in no time.
  3. You can get all the color and vegetables you could ask for.
  4. I get to chop all those said vegetables, which is one of my favorite parts of cooking.
  5. Soup making is SO versatile. You don’t like a certain veggie? Cut it. You have extra of something else? Throw it in the pot.

We are just beginning the crazy life of kids having after school activities and sitting down together for meals is a big priority for my husband and me. I want to know about my kids and their days and I want them to know about ours too. Because of this, I try to put together a kettle of soup to feed an army every other week or so. (okay, not an army, but maybe enough for 2-3 meals for our little family) I also like to make food with what I have on hand. Yes, I keep a stocked pantry, but there aren’t any crazy “one time use” ingredients here, I promise. This is filling and wonderful and does everything a good soup should do: warm your heart and belly, leaving you feeling full and satisfied. Give it a try!

Your ingredients:

  • 1 1/2 tablespoons olive oil, divided
  • 1 1/2 tablespoons minced garlic, divided
  • 2 cups chopped carrots
  • 2 cups celery
  • 1 cup diced onion, divided
  • 1 pound ground venison (We grind our own and do not mix anything with it. Feel free to use any version of ground meat that your family loves)
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1/2-1 teaspoon each: salt, pepper, ground sage (to taste)
  • 2 tablespoons butter
  • 2 tablespoons flour (If you are gluten free or like a soup rather than a stew, you can totally leave out the butter and flour)
  • 9-10 cups low sodium beef stock (I always make my own base using Orrington Farms base. You can easily control how much sodium you add this way)
  • 1 cup pearled barley, uncooked

Your Steps to Venison and Barley Stew

Heat a large dutch oven on the stove. Add 1/2 tablespoon olive oil. Once hot, add 1/2 cup diced onion and 1/2 tablespoon garlic. Sauté over medium heat for 3 minutes. Add ground venison. Sprinkle with a little salt and pepper. Brown meat, breaking into larger pieces, taking about 7 minutes or so. Remove from the kettle, but keep it warm. Add remaining olive oil. Once hot, add remaining onion, carrots, and celery. Add garlic, salt, pepper, and sage. Sauté for approximately 10 minutes, until just tender, stirring often.

Remove the vegetables from pan. Put the meat and onions back into the pan with the butter. Once the butter has fully melted, stir in the flour. Cook over medium heat for 1-2 minutes. The SLOWLY stir in the beef stock, 1/2 cup-1 cup at a time, allowing to thicken as you go. (I suck at this game. I am not patient when it comes to maintaining a rue, but when you are able to, it’s magic, so try your best. You can always grow here, right?! Or maybe I just need to…maybe you rock. Go you!).

Stir the vegetables back in, along with the peas and corn. Bring up to a low boil and stir in the barley. Allow to simmer for 40-50 minutes, until the barley is cooked through. This stew becomes so creamy over the next few days as you allow the barley to settle in. Sometimes soup and stew need another side to make a meal, but believe me, this wonderful venison and barley stew is a meal in and of itself. Yum!

Note: You can watch the stock and allow the thickness to suit your needs. It will thicken over time, so you may want to hold onto a cup or two of stock and add it later if you are serving this over a few days like I like to do.

  • 1 cup frozen corn

  • 1/2-1 teaspoon ground sage
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 9-10 cups low sodium beef stock
  • 1 cup pearled barley uncooked

Instructions

Venison Chili: Wisconsin’s Cold Weather Companion

True confession: I use to hate chili with a capital H. Well, I don’t know if I so much hated the chili or if it was all the kidney beans my mom wouldn’t let me pick out because I actually hated those. But I have grown wiser in my old age and have developed a deep love for venison chili in the cold Wisconsin winter months. If I am feeling ambitious it is accompanied with some honey corn bread. Not so ambitious? A side of homemade sourdough is almost as awesome.

If you have read many of my posts, you know I am all about getting all the veggies in my main meals. Does the recipe originally call for 1/2 cup of green pepper? You can bet I’ll up that to a full cup. Veggies make my heart happy (I am fairly certain I have a Pinterest board by that name…no joke. I mean, who does that?!) So this venison chili recipe has lots of chunky veggies because I wouldn’t have it any other way.

Few things before you get started:

  • I try to buy low sodium or no salt added tomato products if at all possible. I like to be able to control the salt I add to my cooking. If you use regular tomatoes, you may want to decrease the added salt. Just taste it first 😀
  • I started using 4 cups of the tomato juice (saving a couple cups for my husband because he loves it), but my kids thought the chili powder left it a little spicy so I poured the rest of the container of juice in. If you like a spicy chili that is super chunky, leave it at 4 cups instead of 46 ounces. Or just be like me and try it first. If you want to cut the kick or you like a not so thick chili, add the remaining 14 ounces.

Your ingredients:

  • 2 tablespoons olive oil
  • 1 pound ground beef (We do our home ground venison, so your favorite ground protein would work great here whether it be turkey, beef, bear, you name it)
  • 1 1/2 cups chopped green pepper (about 1 large)
  • 2 teaspoons minced garlic
  • 1 cup chopped onion (about 1 medium)
  • 1 cup chopped celery (about 3 stalks)
  • 2 15 ounce cans diced tomatoes (no salt added)
  • 1 15 ounce can of tomato sauce
  • 1 15.5 ounce can of kidney beans, drained and rinsed.
  • 46 ounce container low sodium tomato juice (see the note above for how much you decide to actually use)
  • 1 1/2 teaspoons cumin
  • 2 tablespoons chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon white sugar

Your Steps

Heat a Dutch oven or soup kettle over medium heat. Add 1 teaspoon of olive oil. Once warm, add 1 teaspoon of garlic. Sauté for 20 to 30 seconds. Add ground protein. Season lightly with salt and pepper from your shakers. Cook until browned and remove. Drain if necessary. In the same pan, add remaining olive oil and garlic. Then add pepper, onion, and celery. Sauté over medium heat for 7-10 minutes, until they are just becoming soft. Stir in remaining ingredients, including the browned protein. Allow to simmer on low as long as you can wait, up to an 90 minutes, to allow the flavors to mingle 🙂

Serve this venison chili alone or with all the toppings: oyster crackers, cheese, chopped onion, sour cream. Even better if you have some fresh baked bread! My son gave it two thumbs up, so I hope you enjoy it as much as he did! —Jess

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound ground venison or beef
  • 1 1/2 cups chopped green pepper about 1 large
  • 2 teaspoons minced garlic
  • 1 cup chopped onion about 1 medium
  • 1 cup chopped celery about 3 stalks
  • 2 15 ounce cans diced tomatoes no salt added
  • 1 15 ounce can of tomato sauce
  • 1 15.5 ounce can of kidney beans drained and rinsed
  • 46 ounce container low sodium tomato juice
  • 1 1/2 teaspoons cumin
  • 2 tablespoons chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon white sugar

Instructions
 

  • Heat a Dutch oven or soup kettle over medium heat. Add 1 teaspoon of olive oil.
  • Once warm, add 1 teaspoon of garlic. Sauté for 20 to 30 seconds.
  • Add ground protein. Season lightly with salt and pepper from your shakers. Cook until browned and remove. Drain if necessary.
  • In the same pan, add remaining olive oil and garlic.
  • Then add pepper, onion, and celery.
  • Sauté over medium heat for 7-10 minutes, until they are just becoming soft.
  • Stir in remaining ingredients, including the browned protein. Allow to simmer on low as long as you can wait, up to an 90 minutes.
